Chocolate Mug Brownie

This Chocolate Mug Brownie is not only delicious but it is very diet friendly (not to mention it only takes a minute!).

Simple low cost ingredients go a long way

One main reason for starting The Substitute Kitchen was to gather recipes and find the best ones that were not only tasty but easy on the wallet. I try to focus on finding recipes that have ingredients that are budget friendly and can be reused for other recipes. Obviously pantry items are the easiest but I’ve learned they can also be sneakily expensive over time (especially if you think you are going to use them and then they sit untouched on the shelf for months).


  • 1 tbsp Premium Baking Coco (100%)  (can also use cacao)
  • 1 tbsp Vanilla Whey isolate protein (*can’t do Whey? Use Pea protein)
  • 1 tbsp Organic ground flaxseed
  • 3 tbsp water
  • 1/2 tbsp cream cheese (*DF: substitute Kite Hill almond cream cheese)
  • 1 tsp oil or butter (I used avocado oil)
  • 1/2 tsp sugar substitute (I used stevia)
  • 1/4 tsp baking powder


*Choose your mug wisely, this brownie will rise while cooking. I prefer taller mugs*

  1. Mix ground flaxseed with 3 tbsp water to make flax egg in your mug.
  2. Add oil (or melted butter) to flax egg.
  3. Warm cream cheese for 10-12 seconds in separate bowl and add to wet ingredients.
  4. Mix together dry ingredients in separate bowl.
  5. Mix dry ingredients into wet ingredients and mix well.
  6. Microwave for about 1 minute but no longer than 75 seconds.
  7. Eat in mug or flip over onto a plate. *caution it will be very hot*
  8. Enjoy!!

But really who can resist a quick chocolate fix?? I can’t. This took me a solid 5 minutes to inhale. It is definitely lighter than some of the other cloud breads and (obviously) less eggy. All around this was my favorite. Slightly more dishes but worth it.
