My name is Kate Zumach and I am a Medical Animator by day and Substitute Kitchen baker/cook by night. I have lived my whole life navigating different allergies and food restrictions so I know first hand how stressful and frustrating it can be. I’m here to help you navigate through the chaos and find recipes that are not only safe but also tasty good!



I love food… A lot

I love food and I want everyone to love food too! I wasn’t always in love with food. Actually being really sick and constantly having food sensitivity symptoms caused me to become afraid of food. This lead me down a scary path of developing anorexia. I’m not alone though because I know that this happens more than we all realize. Food fear and anxiety is real, especially when there is such a stigma surrounding food allergies. I was afraid to go out to eat with friends because I felt like I was causing a fuss for asking for a Gluten free bun, or an omelette made without butter. I felt like a burden for having allergies.

When I had to cook I also became so frustrated with my food allergies. I would buy all of these expensive food products that I really had no idea how to cook and they would go terribly. I think everyone knows and can sympathize with a food substitution disaster. I wasted so much money just trying to make a simple pizza that I ended up throwing in the towel.

After a collaboration of brain power with a coworker, Randall, we came up with the idea of creating a blog (and much more) that would help people that had to cook with food substitutions. We wanted to create a space that would house recipes, how to’s, and common substitution ingredients that actually work. Thus The Substitute Kitchen was born.

I know the struggle and that’s why I want to help others overcome the anxiety and become more comfortable with food again. My goal and the goal of The Substitution Kitchen is to make recipes that are safe and fun (and sometimes decadent) so that you don’t have to worry about the ingredients and can focus on enjoying eating.

I finally found peace with my diet, my body, and my food restrictions and I want everyone to experience that freedom. I hope that these recipes can help everyone reach their food goals. Whether that is cooking for yourself, cooking for a friend with allergies, or simply finding diet specific recipes for you health and fitness goals.
